Cherry Coffeecake
A buttery breakfast cake studded with cherries and finished with streusel crumb. A sweet brunch piece equally welcome with morning coffee or as an afternoon snack.
Cream shortening, sugar and butter with electric mixer.
Add eggs and flavorings.
Beat until fluffy.
Add flour and baking powder; mix until smooth.
Place 2/3 of the batter in a greased 10 x 15 x 1-inch jelly roll pan.
Spread evenly.
Place the pie filling evenly over the batter.
Drop remaining batter by teaspoonfuls over pie filling.
Bake at 350Β° for 35 minutes. Drizzle with icing made of 1/2 cup powdered sugar and 1 to 2 tablespoons of milk while warm.
