Cheesy Mashed Potatoes
Cheesy Mashed Potatoes is an moderately easy dinner. Made with 6 large potatoes, peeled and quartered, 1 (8 oz.) pkg. softened cream cheese, 1 c. shredded cheddar cheese, 1/2 c. sour cream and 1/3 c. chopped onion, this recipe delivers authentic, satisfying flavors. Place potatoes in a large saucepan; cover with water.
Cover and bring to boil.
Cook for 20 to 25 minutes or until very tender; drain well.
In mixing bowl, mash potatoes.
Add cream cheese, Cheddar cheese, sour cream, onion, egg, salt and pepper; beat until fluffy.
Transfer to a greased 2-quart baking dish.
Cover and bake at 350Β° for 40 to 45 minutes or until heated through.
Sprinkle with additional cheese, if desired.
