Cheese Soup
Cheese Soup is an moderately easy dinner. Made with 2 tbsp. chopped onion, 1 tbsp. melted butter, 3/4 c. stock or stock substitute, 2 c. milk and salt and paprika to taste, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute onion in butter for 3 minutes.
Stir in flour until well blended.
Stir in slowly the stock or stock substitute.
When the sauce is smooth and boiling, add milk.
Heat soup but do not boil. Add and stir until melted the grated cheese.
Add salt and paprika.
Yield
3 cups.
