Cheese Soup
Cheese Soup is an moderately easy dinner. Made with 1/2 c. coarsely cut carrots, 1/2 c. chopped celery, 3/4 c. boiling water, 1/4 c. chopped onions and 1 1/2 c. cheese, shredded (any kind; swiss, american, etc.), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cook carrots and celery in boiling water until tender.
Do not drain.
In skillet, cook onions and butter until tender.
Stir in flour, gradually add milk.
Cook and stir until thick.
Add broth, cheese, carrots and celery.
Stir over low heat until cheese melts.
