Cheese Grits
Cheese Grits is an moderately easy dinner. Made with 1 c. grits, 1 1/2 tsp. salt, 4 c. boiling water, 3 egg yolks and 1/2 stick oleo, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook grits in boiling water and salt.
Cool slightly.
Add egg yolks, one at a time, and beat well after each addition.
Melt oleo; add flour and mustard to it, then add this mixture to warm grits.
Add 2 cups grated cheese; stir.
Fold in stiffly beaten egg whites.
Put in greased 9 x 13-inch glass baking dish and cover with the remaining cheese.
Bake 30 to 40 minutes in a 350Β° oven.
