Cheese Gnocchi is an easy dinner. Made with 2 lb. ricotta cheese, 2 eggs, 1 tsp. salt, 3 c. flour and 1/2 c. grated cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Beat eggs, Ricotta cheese and grated cheese.
Add salt. Gradually add flour.
Knead.
Cut into small pieces; boil in salted boiling water (about 4 quarts).
Can cover with favorite red sauce or serve with butter and grated cheese.
Boil for 20 minutes; drain.
