Cheese Enchiladas
Cheese Enchiladas is an moderately easy dinner. Made with 12 tortillas (corn or flour), 3 tbsp. oil, 2 medium onions, chopped, 1/2 lb. grated longhorn cheese and 2 (10 oz.) cans enchilada sauce, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Dip tortillas, one at a time, in hot oil to soften and drain on paper towel.
Sprinkle onion, cheese and peppers on tortillas and roll up.
Place, lapped side down, in shallow baking dish and cover with the enchilada sauce.
Top with grated cheese and bake at 350Β° until cheese is melted.
