Cheese Enchiladas
Cheese Enchiladas is an moderately easy dinner. Made with 8 corn tortillas, 1 c. bottled picante sauce, 2 c. low-fat (1%) cottage cheese, 1 c. shredded reduced-fat cheddar cheese (4 oz.) and 1/2 c. thinly sliced green onion, this recipe delivers authentic, satisfying flavors. Preheat oven to 350Β°.
Spray with Pam a 6 x 10-inch baking pan. Stack tortillas and wrap tightly in aluminum foil.
Heat for 10 minutes.
While tortillas are heating, spread 1/3 cup picante in bottom of pan.
Combine cottage cheese, 3/4 cup Cheddar cheese and remaining ingredients.
Mix well.
