Cheese Enchiladas is an moderately easy dinner. Made with 1/4 c. chopped onion (1 small), 1 c. chopped green pepper (1 medium), 1 clove garlic, minced, 2 tbsp. vegetable oil and 2 tbsp. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute onion, green pepper and garlic in vegetable oil until soft.
Add 2 Tbsp. flour, chili powder and salt.
Cook until bubbly.
Add water and instant beef broth and cook, stirring, until thickened.
Add in cheddar cheese.
