Cheese Cake Cupcakes
Cheese Cake Cupcakes is an moderately easy dinner. Made with 2 (8 oz.) pkg. cream cheese, 3/4 c. sugar, 2 eggs, 1 tsp. vanilla and 1/4 tsp. lemon juice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix well all ingredients, except vanilla wafers.
Line muffin pans with cupcake papers.
Place vanilla wafer in bottom of paper and pour cheese mixture over wafer, approximately 2/3 full.
Bake at 350Β° for 10 to 15 minutes.
When cooled, top with a teaspoon of pie filling (cherry, blueberry, apple, etc.).
