Cheese Cake is an moderately easy dinner. Made with 1 box lemon jell-o, 1 c. boiling water, 1 (8 oz.) pkg. cream cheese, 1 c. sugar and 3 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Dissolve Jell-O in boiling water; chill until slightly thickened.
Cream together cream cheese, sugar and lemon juice. Add gelatin and blend well.
Fold cracker crumbs, sugar and margarine.
Press 2/3 of cracker mix in bottom and sides of a 9 x 13-inch pan.
Add filling and sprinkle with remaining crumbs. Chill several hours.
