Chalupas
Chalupas is an moderately easy dinner. Made with 6 corn tortillas, 1 (16 oz.) can refried beans, 2 tsp. chili powder, 1/2 tsp. garlic powder and 1 1/2 c. shredded cheddar cheese, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Heat oil in skillet (1/8 inch) over medium heat until hot. Place tortillas, one at a time, in hot oil, bending one side up about 1 inch with tongs until set.
Repeat with other side to form a shallow boat.
Mix beans, chili powder, garlic powder and oregano.
Spread about 1/4 cup on each tortilla; top with cheese. Place on ungreased cookie sheet.
Heat oven to broil; place cookie sheet under for 2 to 3 minutes until cheese has melted.
Serve with tomato and avocado wedges and salsa.
