Chalupa
Chalupa is an moderately easy dinner. Made with 3 to 4 lb. boneless beef or pork roast, 1 lb. washed dry pinto beans, 1/2 c. chopped onion, 2 tbsp. chili powder and 1 tsp. oregano, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Put pork or beef roast, dry beans, onion, garlic, seasonings and water into large crock-pot.
Cover and cook for at least 10 to 12 hours, on low setting, or until meat falls apart.
Serve on top of small Fritos with your favorite garnish.
Serves several.
Meat and bean mixture freezes well.
