Ceylonese Beef is an impressive dinner. Made with 4 onions, sliced, 2 lb. chuck, trimmed and cubed, 1/2 tsp. freshly ground pepper, 1/2 tsp. ground cumin and 4 garlic cloves, minced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In a large heavy pan, cook onions in oil over moderate heat, stirring until golden.
In a bowl, combine 3 tablespoons vinegar, salt, pepper and beef.
Add this to the onions and cook over moderate heat until beef is browned, 10 to 15 minutes.
Add cumin, turmeric, garlic and bay leaves.
Stir for 30 seconds.
