Celery Pie
Celery Pie is an moderately easy dinner. Made with 1 head celery, 1 small onion, salt, 1/2 oz. margarine and 1/2 oz. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Trim and cut celery into 2-inch lengths.
Put into pot with chopped onion and enough water to cover; add salt and simmer until tender.
Melt margarine in separate pan.
Add flour, then milk and 4 ounces of stock and stir until boiling.
Season to taste and mix with chopped, hard-boiled egg.
Layer celery in a greased pie plate and pour sauce over.
Mix mashed potatoes with cheese; season and spread over celery.
