Cauliflower Quiche
Cauliflower Quiche is an moderately easy dinner. Made with 1 (8 oz.) pkg. frozen cauliflower, vegetable cooking spray, 1/2 c. chopped green pepper, 1/3 c. finely chopped onion and 1 c. (4 oz.) shredded low-fat cheddar cheese, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook cauliflower according to package directions omitting salt; drain well and coarsely chop.
Place cauliflower on paper towels and squeeze until barely moist.
Coat a 9-inch pie plate with cooking spray.
Layer cauliflower, green pepper, onion and cheese in pie plate.
Combine remaining ingredients in container of electric blender; process 15 seconds or until well blended. Pour into pie plate.
Bake at 375Β° for 30 to 35 minutes or until set.
Let stand 5 minutes before serving.

6 servings (about 167 calories per serving).
