Cashew Chicken
Cashew Chicken is an moderately easy dinner. Made with 2 tbsp. margarine, 16 oz. chicken, 1 tbsp. soy sauce, 2 to 3 oz. cream cheese and 2 tbsp. margarine, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute first 3 ingredients on medium-high (approximately 10 minutes).
Cheese center of pan, reduce heat and cook
5 minutes.
Stir and blend in cream cheese.
Set aside.
Same skillet put 2 tablespoons margarine, broccoli, onion, mushrooms and soy sauce.
Stir-fry on high approximately 5 minutes just until color of onion/broccoli changes.
Add in chicken and simmer 5 to 10 minutes.
Stir in cashews if desired.
