Carrot Ring
Carrot Ring is an moderately easy dinner. Made with 3 c. finely shredded fresh carrots, 1/3 c. finely diced celery, 1 tsp. finely chopped onion, 1/2 c. fine dry bread crumbs and 1 c. shredded cheddar cheese, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine first 8 ingredients.
Beat egg whites until they stand in soft, stiff peaks.
Fold egg whites into carrot mixture.
Pour into well-greased 1 1/2-quart ring mold.
Place in pan of hot water.
Bake at 325Β° for 1 1/4 hours.
Remove from oven and let stand for 10 minutes.
Turn onto serving plate.
Fill center with cooled peas and onions, or any other desired vegetable.
