Carrot Puff
Carrot Puff is an moderately easy dinner. Made with 1 lb. carrots, peeled and cut into 1-inch pieces, 1/2 c. butter or margarine, 3 eggs, 3/4 c. sugar and 3 tbsp. all-purpose flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Grease an 8-inch square baking dish.
Steam or boil carrots until tender (about 20 minutes).
Place margarine, eggs, sugar, flour, baking powder and vanilla in blender.
Add carrots a little at a time and purée the mixture.
Pour into greased baking dish. Bake at 350° for 45 minutes.
Let stand for 5 minutes before serving.
