Combine flour, whole wheat flour, baking powder, baking soda, cinnamon and ginger.

In second bowl combine oil, sugar or substitute, eggs, pineapple juice and vanilla.

Stir liquid into dry ingredients until smooth.

Stir in carrots, raisins and pineapple.

Pour into greased and floured 9 x 5-inch loaf pan. Bake 35 to 40 minutes at 350Β° or until inserted toothpick comes out clean.

Cool in pan on rack for an hour.

Unmold cake and serve.

Sprinkle with powdered sugar if desired.
