Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 1 1/2 c. corn oil, 1 3/4 c. sugar, 3 eggs, 2 c. flour and 2 tsp. baking soda, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Beat together oil, sugar and eggs.
Mix flour, baking soda, salt and cinnamon together.
Add to sugar and egg mixture and beat.
Add vanilla; mix grated carrots, walnuts, flaked coconut and crushed pineapple.
Add to mixture; blend well.
Pour batter in a greased and floured Bundt pan.
Bake at 350Β° for 1 hour or until tester comes clean.
Cool on cake rack.
Remove from pan.
