Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 2 c. all purpose flour, 2 c. sugar, 2 tsp. salt, 2 tsp. soda and 3 c. grated carrots, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 350°.
Sift dry ingredients into large bowl and set aside.
In blender container, blend 1 c. carrots with 1 egg and 1/2 c. oil.
Repeat twice and adding nuts and extra egg with last blending.
Combine with dry ingredients, mixing well.
Stir by hand, no mixer needed.
Pour into well greased tube pan.
Bake at 350° for 1 hour.
Cool and frost.
