Carrot Cake

Beat eggs.
Add sugar and oil; mix very well.
Sift together dry ingredients; be generous with the cinnamon.
Mix in.
Stir in carrots and nuts.
Pour into 3 prepared 9-inch round layer pans. Bake at 350Β° for 35 minutes.
Or, bake in 2 Bundt pans (1 Bundt and 2 small loaves work, too) for 45 to 50 minutes.
