Beat eggs, sugar and oil;
Sift together, flour, baking powder, soda, salt and cinnamon.
Gradually add to sugar mixture, while mixing, then add carrots, nuts and vanilla.
Grease and flour 3 cake pans.
Divide batter into pans, bake at 350 degrees for 30 min.
Frost with cream cheese frosting.
