Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 2 c. flour, sifted (plain), 2 tsp. baking powder, 1 1/2 tsp. salt, 1 1/2 tsp. baking soda and 2 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Sift together flour, baking powder, soda, salt and cinnamon. Add sugar, oil and eggs.
Mix well.
Add carrots, pineapple, nuts and coconut.
Blend thoroughly.
Pour into 3 (9-inch) layer pans or a 9 x 13-inch greased pan.
Bake at 350Β° for 35 to 40 minutes in layer pans, 1 hour in 9 x 13-inch pan.
Top with Cream Cheese Icing.
