Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 1 1/4 c. oil, 2 c. sugar, 2 c. flour, 2 tsp. baking soda and 1 tsp. baking powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 325Β°.
Combine oil and sugar and mix well. In large bowl, combine all of the dry ingredients.
Add 1/2 of dry ingredients to oil mixture and blend well.
Add remaining dry ingredients.
Alternately add eggs, one at a time, mixing well after each egg.
Add carrots and mix well.
Add pecans.
Pour into 9 x 13 dish (greased and floured) and bake for 1 hour and 10 minutes.
