Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 4 eggs, 3/4 c. wesson oil only, 1/2 tsp. soda, 1 tsp. vanilla and 3 c. grated carrots, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Mix eggs, sugar and oil until creamy (will not get fluffy; will still have sugar crystals); add flour, soda, cinnamon and vanilla.
Add carrots and mix.
(I add about 1 cup of nuts to my batter; but that is optional.)
Bake 30 to 40 minutes; cool and ice.
