Mix carrots, sugar, eggs, vegetable oil and nuts by hand.
Mix well and add the flour, salt, soda and cinnamon.
Mix all by hand; do not beat.
Bake at 375Β° for 40 to 45 minutes in a well-greased cake pan.
Cool well and ice with cream cheese icing.
