Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 3 c. grated carrots, 1/2 c. chopped nuts, 1 1/2 c. vegetable oil, 1 tsp. vanilla and 3 c. flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Set aside grated carrots, cherries and nuts.
Combine dry ingredients and sift into a large bowl.
Add oil, carrots and vanilla; stir by hand until well done, then beat for 3 minutes. Add nuts and cherries.
Bake in greased and floured angel cake pan for 1 1/4 hours.
