Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 4 eggs, separated, 2 sticks butter or margarine, 1/2 c. oil, 2 c. sugar and 2 large jars of baby food carrots, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine egg yolks and rest of ingredients until well blended.
Beat egg whites and fold into batter.
Pour batter into 2 prepared 9 inch baking pans.
Bake at 375Β° for 25 to 30 minutes or until toothpick inserted in the middle comes out clean.
Allow to cool then frost with cream cheese frosting.
