Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 2 c. all-purpose flour, 2 c. sugar, 1 tsp. baking powder, 1 tsp. baking soda and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Grease and lightly flour a 13 x 9 x 2-inch baking pan.
In a large mixing bowl, stir together flour, sugar, baking powder, baking soda, salt and cinnamon; add carrots, oil and eggs.
Mix until moistened; beat at medium speed of electric mixer for 2 minutes.
Pour into preferred (13 x 9 x 2-inch) baking pan.
Bake in a 325Β° oven for 50 to 60 minutes or until wooden pick inserted in center comes out clean.
Cool thoroughly on wire rack.
Frost with Cream Cheese Frosting.
Serves 12 to 15.
