Carrot Bread
Carrot Bread is an impressive baked good you can prepare in about 1 hour 44 minutes. Made with . pkg. cut carrots, c. flour, c. sugar, c. brown sugar and . salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cook carrots; place carrots in blender and grate coarsely, but do not purée.
In a large bowl, combine flour, salt, baking soda, cinnamon and nutmeg.
Stir together carrots, oil, eggs, water and vanilla.
Add dry ingredients.
Stir until blended.
Pour batter into greased loaf pan.
Bake at 350° for 65 to 75 minutes, or until done.
Check every so often to see if done.
Cool for 10 minutes.
Remove from pan and serve.
