Mix sugar, oil and eggs.
Sift in flour, soda, salt and cinnamon.
Add grated carrots and nuts.
Carrots may be grated in blender.
Pour in floured, ungreased loaf pan, 9 x 5 x 3-inches. Bake at 350Β° for 1 hour or until done; cool.
May be frozen.
Makes 1 loaf.
