Carrot Bars
Carrot Bars is an moderately easy dinner you can prepare in about 1 hour 4 minutes. Made with -1/4 c. cooking oil, c. sugar, eggs, c. flour and . salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine oil and sugar; mix well.
Add 4 well beaten eggs. Sift together flour, salt, soda and cinnamon.
Add this to sugar, egg and oil mixture and mix well.
Fold in 3 cups of carrots. Grease a large cookie sheet (with sides) and flour.
Pour in batter to about 1/2 inch thickness.
Bake at 350 degrees for 25 to 30 minutes or until knife inserted in center comes out clean.
