Carrot Balls
Carrot Balls is an moderately easy dinner. Made with 2 c. sliced carrots, cooked and mashed, 1 1/2 c. soft bread crumbs, 1 c. (4 oz.) shredded sharp cheddar cheese, 1/2 tsp. salt and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine carrots, bread crumbs, cheese, salt, pepper and hot sauce.
Toss lightly.
Beat egg whites (at room temperature) until stiff peaks form.
Fold into carrot mixture (mixture may be chilled at this time).
Shape mixture into 1-inch balls and roll in cornflakes.
Place balls on lightly greased baking sheet.
Bake at 375Β° for 30 minutes or until golden brown.
Makes 1 dozen.
