Carolina Cornish Hens
Carolina Cornish Hens is an moderately easy dinner. Made with 3 rock cornish hens, 1/4 lb. bulk sausage (hot), 1 1/4 c. water, 1/4 c. currant jelly, melted and 2 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cut hens in half lengthwise.
In large skillet, brown hens in butter (or spray pan with Pam or such and save some fat and calories) on all sides.
Remove from skillet and drain off drippings.
Brown sausage in skillet, remove and drain on paper toweling.
Pour drippings from skillet.
