Caribbean Pineapple Ginger Cooler is an moderately easy dinner. Made with 6 c. water, 3 1/2 lb. fresh pineapple, cut into small pieces (including peel and core), 1 oz. fresh ginger root, peeled and grated (about 2 tbsp.), 2/3 c. sugar (or to taste) and juice from 1 lime (or to taste), this recipe delivers authentic, satisfying flavors. In large saucepan, bring water to boil; add pineapple and gingerroot and let mixture cool to room temperature, tightly covered.
