Caramels
Caramels is an moderately easy dinner. Made with 2 c. sugar, 2 c. light corn syrup, 1/8 tsp. salt, 1/2 c. unsalted butter (1 stick) and 2 c. evaporated milk, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Place sugar, syrup and salt in a 3-quart heavy saucepan; cook over medium-high heat until mixture reaches firm ball stage (244Β°), stirring as needed. Add butter and stir while it melts. Slowly add milk, keeping mixture boiling.
Cook rapidly and stir constantly until mixture reaches firm ball stage again.
Remove from heat.
Add vanilla, then pour into a buttered 9-inch square pan.
Cool thoroughly before cutting.
Makes 81 caramels (1 x 1-inch).
