Caramel Icing
Caramel Icing is an easy dinner. Made with 2 c. sugar, 1 c. whipping cream, 1/4 c. sugar, 1 tsp. vanilla and 1/3 stick margarine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Bring to a boil in a heavy, large pan 2 cups sugar and whipping cream.
In a small pan or skillet, caramelize 1/4 cup sugar.
Stir to keep from burning.
When caramelized, add to the cream and sugar mixture.
Cook until soft ball forms in cold water.
This only takes a few minutes.
Take off heat; add vanilla and margarine.
Beat with mixer until thick.
If too thick, add a little milk.
