Caramel Corn
Caramel Corn is an moderately easy dinner. Made with 5 qt. popped corn, 1 c. butter, 2 c. brown sugar, 1/2 tsp. salt and 1/2 c. light corn syrup, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Spread popped corn in large shallow pan.
Hold in 250° oven to keep crisp.
Combine remaining ingredients except soda.
Cook at medium, stirring to dissolve sugar and prevent sticking, until a drop of the syrup forms a firm ball in a cup of water (248°). Then stir in the soda.
Pour over corn and mix well to coat evenly.
Return to oven for 45 minutes, stirring every 15 minutes. Can also add nuts.
This can be frozen and served later in bags.
