Caramel Corn
Caramel Corn is an moderately easy dinner. Made with 1 c. popcorn (when popped it equals about 12 c.), 1/2 tsp. salt, 1 c. peanuts or mixed nuts, 1 1/2 tbsp. butter, melted and 1 1/2 c. brown sugar, this recipe delivers authentic, satisfying flavors. Pop corn; add nuts and salt.
In saucepan, melt butter.
Add brown sugar and water; stir until sugar is dissolved.
Boil without stirring to soft ball stage (238°).
Put popped corn and nuts in buttered roaster.
Pour caramel mixture over them and mix well.
Bake at 200° for 1 hour, stirring every 15 minutes.
