Caponata
Caponata is an impressive dinner. Made with 1/3 c. olive oil, 1/2 green pepper, cubed, 1 medium onion, chopped, 1 medium peeled eggplant, cubed and 3 to 4 large cloves garlic, chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Saute in oil the cubed pepper, chopped onion, cubed peeled eggplant and chopped garlic for 10 to 15 minutes.
Mix together tomato paste, vinegar, olives, seasonings and mushrooms; combine with sauteed mixture.
Cover; simmer for 20 to 30 minutes; stir occasionally.
