Callaloo Soup
Callaloo Soup is an moderately easy dinner. Made with 1 lb. (450 g.) callaloo leaves, or spinach as substitute, 3 pt. (1 3/4 1.17 c.) chicken stock, 1 large onion, finely chopped, 8 oz. (225 g.) salt beef, chopped and freshly ground black pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Remove thick stems of leaves, chop roughly and put into saucepan with all ingredients except okras and crab.
Cover and simmer until meat is tender.
Add okras; cook for 8 minutes. Remove pepper and blend.
Add crab, reheat and adjust seasonings. Serve piping hot with slices of avocado pear and hot bread.
