California Egg Salad is an moderately easy dinner. Made with 6 hard-boiled eggs, 3/4 c. cottage cheese, 1/4 c. sliced black olives, 3/4 tsp. basil leaves, crushed and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine all except tomatoes and lettuce.
Cover and chill. To serve, cut tomatoes in 6ths almost to the edge.
Place them on beds of lettuce and put 3/4 cup heap of egg salad in center of the tomato flower.
