Calabacita is an moderately easy dinner. Made with 1 small fryer, cut up, 5 to 6 medium squash (zucchini), chopped, 1 (10 oz.) pkg. frozen corn, cumin and pepper, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Brown fryer in deep saucepan in 3 tablespoons shortening.
Add chopped onion and tomato and brown.
Add squash, corn and seasonings to taste.
Add 4 tablespoons tomato sauce.
Cover and cook for about 1 1/2 hours, stirring occasionally.
