Cajun Roast

Make small slits in roast (over all sides of roast).
Stuff into each small pocket a sliver of garlic and a piece of green onion.
Rub butter over roast, then rub Dijon mustard over roast (all sides).
Sprinkle spices over roast, then pat down.
Bake in 500° oven uncovered for 15 minutes.
Then bake in 325° oven, covered, for 1 to 1 1/2 hours, depending on size of roast and cut of meat.
