Cajun Casserole
Cajun Casserole is an moderately easy dinner. Made with 1 (20 oz.) pkg. 15 beans, 1 (14 1/2 oz.) can stewed tomatoes, 1 large onion, chopped, 1 clove garlic, chopped and 1 lemon, juiced, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Wash beans.
Put in a large pot and cover with water and 2 teaspoons salt. Soak overnight.
In the morning, drain and add 2 quarts water.
Bring to a boil and simmer 3 hours.
Add seasoning packet from bean package and all ingredients except rice. Simmer 30 minutes. Stir in rice and serve hot or freeze to serve later.
