Cactus Cones
Cactus Cones is an moderately easy dinner. Made with 2 lb. ground beef, 1 egg, beaten, 1/2 c. milk, 1/2 c. uncooked rice and 1/2 c. chopped green pepper, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Combine ground beef, egg, milk, rice, green pepper, 2 teaspoons taco or enchilada mix and salt.
Shape meat mixture into 8 cones.
Brown cones on all sides in cooking fat.
Combine tomatoes, tomato juice and remaining enchilada sauce mix in deep pan.
Bring to a boil.
Place cones (pointing up) in sauce.
Cover and cook slowly for 1 1/2 hours.
Remove cones to warm serving dish.
Thicken sauce with flour, if desired, and spoon over cones. Makes 8 servings.
