Butternut Muffins
Butternut Muffins is an moderately easy dinner. Made with 2 c. flour, 4 tsp. baking powder, 2 to 3 tbsp. sugar, 1 c. mashed, cooked butternut squash or sweet potatoes and 2 tbsp. vegetable oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Sift dry ingredients together.
In separate bowl, combine squash with milk, then add oil and beaten eggs.
Combine the two mixtures with as little beating as possible.
Fill 12 greased muffin tins three quarters full and bake at 400Β° for 20 to 25 minutes or until golden brown.
Add other ingredients like raisins, chopped nuts, spices, etc.
