Bruschetta
Bruschetta is an moderately easy dinner. Made with 1 loaf french bread, 2 tomatoes (do not refrigerate for best flavor), chunked up, 2 heaping tsp. garlic, salt and pepper to taste and about 2 tsp. olive oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Slice and butter French bread.
Brown/toast bread in oven.
Slice tomatoes; drizzle olive oil over tomatoes.
Mix in garlic, salt, pepper, oregano and Parmesan.
Slice white cheese and lay slice on toasted French bread.
Cover top of bread/cheese with tomato mixture.
Return to oven and melt cheese.
Serve warm if possible; works as an appetizer or main dish.
